Yucky Bananas in the pantry………
HOMEMADE BANANA PUDDING
(Grandma Reva)


1 egg
2/3 sugar
1/4 cornstarch or 1/3 cup flour
2 cups milk
1/4 tsp salt
4 bananas
1/2 vanilla wafers
1/3 stick butter
1 tsp vanilla


Mix sugar & cornstarch. Stir in egg. Add milk & salt. Bring to boil in a heavy pot on medium heat. Warm until thickened. Remove from heat. Stir in butter and vanilla until dissolved. Add bananas. If they are brown, wait until pudding is cool to adding doing so. Stir in cookies (some broken, mostly crushed, same some for the top). Serve warm (my favorite) or cold.

Variation:
I only had half the bananas I needed, so I split the batch. Made half with bananas, and used warm peaches and oatmeal cookies for the other half. Sprinkle with a little cinnamon!
